Quinoa. This plant was domesticated at least 3,000 years ago in the Andes of South America, where it remains an important food crop. High in protein and minerals, it is used in breakfast cereals, baked products, and as animal feed. It contains no gluten, so it cannot be used to make leavened bread on its own. It is in the same family as beets and spinach.
